Vegetable Dishes: Tofu Kebab

Tofu Kebab


  • a little pepper
  • 0.5 tsp. salt
  • 4 tbsp. breadcrumbs
  • 8 wooden skewer
  • 2 tbsp. lemon juice
  • 180 g plain yoghurt
  • 500 g green asparagus
  • olive oil to fry
  • 0.5 bunch thyme
  • 500 g tofu
  • 16 date tomatoes (ca. 200 g)

Cut the tofu into 16 cubes of the same size, toss them with the lemon juice and salt, and coat each cube in breadcrumbs. Thread the tofu and tomatoes onto the skewers.

Cut the asparagus diagonally into pieces, sauté in hot oil approx. 5 minutes, salt, and remove. Fry the skewers in the same pan in batches for around 3 minutes each. Finely chop the thyme, stir into the yoghurt, and season to taste.
