Potato and Cheese Salad


  • a little pepper
  • 0.5 tsp. salt
  • 1 bunch flat-leaf parsley, finely chopped
  • saltwater, boiling
  • 5 tbsp. olive oil
  • 3 tbsp. white balsamic vinegar
  • 3 tomatoes, cut into segments
  • 600 g baby potatoes, cut in half or into quarters
  • 180 g semi-hard cheese (e.g. Cheddar), cut into pieces
  • 0.5 red chilli pepper, cut into rings, insides removed

Boil the potatoes in salted water for approx. 15 mins. until soft, drain. Combine the balsamic and oil. Add the potatoes, mix together, leave to steep for approx. 5 mins. Add the tomatoes, cheese, chilli and parsley, carefully mix, season.
