Vegetable Dishes: Egg Sauce with Broccoli

Egg Sauce with Broccoli


  • a little pepper
  • 1 tbsp. white flour
  • 0.75 tsp. salt
  • 1 tbsp. butter
  • 1 bunch chives
  • saltwater, boiling
  • 5 dl milk
  • 2 tbsp. coarse-grain mustard
  • 300 g broccoli
  • 6 hard-boiled eggs
  • 500 g Pappardelle noodles

Combine the milk, flour and mustard in a pan and bring to the boil while stirring. Reduce the heat, simmer for approx. 5 mins., season.

Peel and cut the eggs in half, add to the mixture, simmer for approx. 5 mins. Finely chop the chives and add to the mixture.

Cut the broccoli into florets, cook with the pasta in salted water until al dente, then drain. Stir in the butter and salt to season.
