Veal Roulade with Green Asparagus


  • salt and pepper to taste
  • 0.25 tsp. salt
  • 1 dl full cream
  • clarified butter to fry
  • a little pepper from the mill
  • 100 g veal sausage meat
  • 1 pinch sugar
  • some toothpicks
  • 3 sprig thyme
  • 8 slices raw ham
  • 250 g green asparagus
  • 8 thin veal cutlets
  • 1 dl dry white wine

Cut off the bottom third of each stalk of asparagus, and cut the remainder into long strips. Spread out the cutlets, season them, spread a thin layer of sausage on them, and place the ham and asparagus in the middle. Roll up the cutlets and secure with toothpicks.

Heat the clarified butter in a frying pan and sear the roulades on all sides for 3-4 min. Add the wine, cream, and thyme. Simmer over medium heat for 12-15 minutes, turning frequently.

Remove, keep warm on a plate. Reduce the sauce, season it, and serve it with the meat.
