Starters: Pea Soufflé

Pea Soufflé


  • 0.25 tsp. salt
  • a little pepper
  • a little nutmeg
  • 100 g Sbrinz cheese
  • 2 tbsp. Maizena cornflour
  • 4 fresh egg yolks
  • 2 tbsp. white wine
  • 4 fresh egg whites
  • 100 g frozen peas, defrosted
  • 200 g low-fat quark
Order the ingredients from COOP@home


Puree the peas with the egg yolks and the white wine. Stir in the quark, cheese and cornflour, season. Beat the egg whites and salt until semi-stiff. Fold the egg whites into the pea mixture, season. Place the mixture in the prepared moulds, bake immediately.

Bake for approx. 35 mins. on the bottom rack of an oven preheated to 180°C. To prevent the soufflé collapsing, do NOT open the oven.
