Asparagus-Basil Soup


  • salt and pepper to taste
  • 2 dl vegetable bouillon
  • 2 tbsp. pine nuts, roasted
  • 1 onion
  • 500 g green asparagus
  • 1 litre milk
  • 1.5 bunch basil
  • 4 slices smoked salmon

Peel the bottom third of the asparagus and cut it into pieces. Quarter the onions and cook until tender with the asparagus, milk and bouillon, stirring occasionally, for approx. 20 minutes.

Add the basil to the soup, puree it, and season it. Cut each salmon slice in half. Roll up two halves, overlapping slightly to form a rose, and place in the soup plate. Add the soup. Garnish with pine nuts.
