Lentil Salad with Avocado and Mango Slices

Ingredients

  • salt and pepper to taste
  • 0.25 tsp. salt
  • 2 shallot, finely chopped
  • 5 dl water
  • 4 tbsp. rapeseed oil
  • 1 red chilli, insides removed, finely chopped
  • 1 tbsp. honey mustard
  • 1 avocado 0.5 cut into slices, the rest cut into small cubes
  • 1 mango 0.5 cut into slices, the rest cut into small cubes
  • 150 g lentil stew
  • 4 tbsp. herbal vinegar

Instructions

Boil the water with the lentil stew, cover and cook over a low heat for approx. 30 mins., drain the remaining liquid, season with salt. For the dressing, mix together the mustard with the chilli, season. Mix the diced avocado and mango and warm lentils with 3/4 of the dressing, allow to steep for approx. 15 mins. Divide the lentil salad onto plates, arrange the avocado and mango slices on top in a fan shape, drizzle over the remaining dressing.
