Lamb's Lettuce with Apple and Celeriac Dressing


  • 0.25 tsp. salt
  • a little pepper
  • 0.5 tbsp. mustard
  • 1 tsp. liquid honey
  • 4 tbsp. rapeseed oil
  • 3 tbsp. apple vinegar
  • 1 tbsp. mayonnaise
  • 100 g lambs’ lettuce
  • 50 g low-fat quark
  • 75 g celery, cut into very thin strips
  • 1 red-skinned apple, cut into small cubes
  • 1 tbsp. pumpkin seeds, roasted, coarsely chopped

Mix the mustard with the remaining ingredients and quark in a bowl, season, set aside 4 tbsp of the mixture. Mix the celery and apple into the remaining dressing, allow to steep for approx. 30 mins. Divide the apple & celery salad with nut salad onto plates, drizzle the nut salad with the reserved dressing. Scatter over the pumpkin seeds.
