Greek Summer Salad

Ingredients

  • 1 tsp. salt
  • a little pepper
  • 0.5 tbsp. olive oil
  • 1 tsp. mustard
  • 1 red onion
  • 2 clove of garlic
  • 1 cucumber
  • 1 bunch basil
  • 3.5 tbsp. red wine vinegar
  • 4 tomatoes
  • 2 yellow pepper
  • 200 g feta cheese
  • 40 g black olives
  • 200 g Pariserbrot

Instructions

Stir together mustard, vinegar and oil, add crushed garlic and season. Chop basil coarsely and add.

Slice onion. Slice cucumber in half lengthwise, remove seeds, and cut into sticks. Cut tomatoes into wedges, slice peppers, cut feta cheese into cubes around 1 1/2 cm in size, and add, with the olives, to the other vegetables.

Cut bread into cubes around 1 1/2 cm in size and sauté in hot oil approx. 5 minutes until light brown. Sprinkle a few of the croûtons over the salad and serve the remainder alongside it.
