Crispy bean salad

Ingredients

  • a little pepper
  • 0.75 tsp. salt
  • 3 tbsp. olive oil
  • 4 tbsp. balsamic vinegar
  • 1 yellow pepper
  • 100 g red kidney beans (getrocknet), ca. 12 Std. eingeweicht, abgetropft
  • 1 red onion, grob gehackt
  • water, siedend
  • 1 red pepper, in Würfeln
  • 200 g feta cheese, in Würfeli
  • 1 bunch flat-leaf parsley, grob geschnitten
Order the ingredients from COOP@home

Instructions

Boil the beans in water for approx. 40 mins. until soft, drain.

Mix the beans and remaining ingredients including the oil, season.
