Cheese Salad with Valais Bread


  • a little pepper
  • 1 tbsp. clarified butter
  • 0.5 tsp. salt
  • 0.5 tbsp. mustard
  • 1 onion, cut into thin strips
  • 250 g rye bread, cut into 1-cm cubes
  • 30 g walnuts, coarsely chopped
  • 150 g mountain cheese (e.g. Gomser), cut into small cubes
  • 1 pears, cut into small cubes
  • 50 g dried meat (jerky), cut into strips
  • 4 tbsp. apple vinegar
  • 6 tbsp. rapeseed oil
  • 100 g lambs’ lettuce

Heat the butter in a frying pan and fry the bread and nuts for approx. 5 mins. until crisp all over. Mix the onions with the dried meat. Combine the mustard, vinegar and oil, season. Mix the dressing with the bread salad and serve with the nut salad.
