Rice & Pea Risotto with Seafood and Leeks


  • salt and pepper to taste
  • 1 tbsp. olive oil
  • 0.5 dl white wine
  • 120 g leek
  • 200 g frozen mixed seafood, defrosted
  • 1 bag Express Risi Bisi (250 g)
  • 0.5 bag veal stock
  • 1 tbsp. mascarpone
  • 0.5 bunch dill

Thinly slice the leek, heat the oil, sauté the leek. Drain the defrosted seafood in a sieve, add and sauté for about 1 min. Pour in the wine and the veal stock, bring to the boil, cook over a medium heat for approx. 3 mins. Loosen the Risi Bisi in the packaging and add. Stir in the Mascarpone, gently heat, season and plate up. Finely chop the dill and scatter over.
