Pasta Dishes: Truffle tagliolini

Truffle tagliolini


  • 2 shallot
  • a little pepper
  • 0.5 tsp. salt
  • 1 tbsp. olive oil
  • saltwater, siedend
  • 2 dl full cream
  • 1 organic lemon
  • 500 g noodles (z.B. Tagliatelle tricolore)
  • 0.5 bunch parsley, grob geschnitten
  • 300 g truffle brie

Cook the pasta in salted water until just al dente. Set aside approx. 300 ml of the cooking water and drain the pasta.

Finely chop the shallots and sauté in warm oil. Grate the lemon zest, squeeze out the juice and add. Pour in the reserved cooking water, along with the cream. Slice the cheese into chunks, add half, simmer for approx. 10 mins., season. Puree the sauce and mix with the pasta. Top with the remaining cheese and parsley.
