Spaghetti salad with melon


  • 1 tsp. salt
  • a little pepper
  • saltwater, boiling
  • 4 tbsp. olive oil
  • 1 organic lemon, use grated zest and juice
  • 1 red chilli pepper, insides removed, cut into rings
  • 4 tbsp. grated Parmesan
  • 350 g noodles (z.B. Spaghetti)
  • 1 charentais melon, cut into small cubes
  • 1 cucumber (z.B. Nostrano), halbiert, in Streifen
  • 0.5 bunch peppermint, coarsely chopped
  • 1 bag Mozzarella-Perlen (ca. 120 g), abgetropft
  • a little cress

Cook the pasta in salted water until al dente, drain, rinse under cold water and mix with the oil.

Combine the melon and cucumber with the pasta. Puree the mint and remaining ingredients with a little pepper. Mix the sauce with the pasta, scatter over the mozzarella and garnish with cress.
