Pappardelle with Pork Sausage Ragout


  • a little pepper
  • 1 clove of garlic, cut into thin slices
  • a little olive oil
  • saltwater, boiling
  • 1 onion, chopped
  • 2 raw pork bratwurst (approx. 260 g, e.g. Luganighetta), with their skin casings removed, coarsely chopped
  • 0.5 red chilli pepper, chopped
  • 1 tbsp. parsley, finely chopped
  • 100 g Pappardelle noodles
  • 2 tbsp. Pesto rosso (red pesto)
  • 2 tbsp. grated Parmesan

Heat the olive oil in a pan. Add the pork sausage with the peperoncini, sauté for approx. 10 mins. over a medium heat until golden brown. Stir in the parsley, pesto and olive oil.

Prepare the pappardelle according to the instructions, drain and divide into bowls. Reheat the ragout, arrange on the pappardelle.
