Bacon and Fruit Dough Sticks


  • a little sea salt
  • 30 g butter, soft
  • 5 g yeast, crumbled
  • 30 g fried bacon, cut into small cubes
  • 30 g mixed dried fruits, coarsely chopped
  • 0.25 tbsp. sugar
  • 250 g zopf flour
  • 0.5 tbsp. salt
  • 1.75 dl milk, lukewarm
  • 0.5 egg yolk
  • 1 tsp. water

Fry the bacon in a non-stick frying pan for 1 min., add the dried fruits and sugar and fry for approx. 1 min., then set aside. Mix the flour and salt in a bowl, add the yeast, sugar, butter and milk and knead to form a soft dough. Knead the set aside fruit mixture into the dough. Cover and leave to rise at room temperature for approx. 1 hour until double in size. Divide the dough into 3 portions, shape into smooth balls, roll into lengths, individually twist and place on an oven tray lined with baking paper, then leave to rise again for another 30 mins. Thin the egg yolks with the water and use to coat the lengths of dough and sprinkle over a little Fleur de Sel. Bake for approx. 35 mins. in the centre of an oven preheated to 200°C.
