Lamb Stew with Artichokes


  • 0.75 tsp. salt
  • 2 onion
  • 2 sprig rosemary
  • 2.5 dl meat bouillon
  • 2 clove of garlic
  • a little pepper aus der Mühle
  • 0.5 lemon, nur Saft
  • 800 g leg of lamb, ohne Knochen
  • 2 tbsp. olive oil zum Braten
  • 3.5 dl red wine (trockener spanischer Rotwein)
  • 500 g baby potatoes
  • 1 Glas artichoke hearts in oil (z.B. Fine Food Artischockenherzen in Olivenöl)
  • 0.5 head lettuce with lettuce hearts

Cut the meat into bite-sized pieces Slice the onions into rings and thinly slice the garlic. Heat the oil in a frying pan, brown the meat in batches for approx. 4 mins. per batch. Add the onions and garlic, sauté for 2-3 mins., season. Pour in the wine and stock, add the rosemary, bring to the boil, cover and braise on a low heat for approx. 60 mins. Halve the potatoes and add 25 mins. before the end of the cooking time.

Drain the artichokes, chop the salad into strips, add, heat through and allow to combine in the dish for 3-4 mins. Add the lemon juice.
