Fish: Rolled Salmon Bites

Rolled Salmon Bites


  • a little pepper
  • a little rucola (rocket)
  • 2 pinches salt
  • 2 tbsp. liquid honey
  • 2 tbsp. dill, finely chopped
  • 1 tbsp. condimento bianco
  • 1 tbsp. mild mustard
  • 1 organic lemon, use grated zest, 2 tsp of juice
  • 75 g plain organic cream cheese
  • 200 g smoked salmon cut into slices, cut in half if necessary
  • 100 g cucumber, cut into 5-cm-long sticks
  • 20 toothpicks

Mix together the mustard and the remaining ingredients with the dill and season. Place 1 tbsp of the mixture in a deep bowl. Set aside the remainder.

Combine the cream cheese, lemon zest and lemon juice and season. Coat the salmon with the mixture. Add the cucumber sticks to the marinade in the bowl and mix. Place 1 cucumber stick with a little rocket on each strip of salmon, roll up and fix in place with a toothpick. Drizzle the remaining honey & mustard sauce over the salmon rolls.
