Fish Cakes

Ingredients

  • 1 tsp. salt
  • a little pepper
  • 1 tbsp. olive oil
  • 1 tbsp. mustard
  • 1 bunch parsley
  • 1 fresh eggs
  • 100 g cornflakes
  • 1 bunch thyme
  • 600 g skinned whitefish fillets

Instructions

Fillet the fish, roughly chop and mix with cornflakes, egg and mustard. Finely chop the thyme and parsley, add and season. Knead the mixture well until the ingredients form a compact mass that no longer sticks to your hands. With wet hands, shape the mass into 12 small cakes. Fry the cakes in batches in hot oil over a medium heat for about 4 mins. on each side.
