Yoghurt Cream with Grapes and Cashews


  • 0.5 dl water
  • 180 g plain yoghurt
  • 2 tbsp. icing sugar
  • 2 dl full cream, whipped until stiff
  • 50 g cashews
  • 200 g blue grapes, cut in half

Mix the sugar, water and nuts in a pan, bring to the boil, stirring constantly, reduce the heat, simmer for approx. 5 mins., occasionally shaking the pan, until the nuts are hazelnut brown. Arrange the nuts on a sheet of baking paper, leave to cool, break into pieces.

Mix the grapes and icing sugar, cover and steep for approx. 30 mins.

Stir together the yoghurt and icing sugar, fold in the whipped cream.

Divide 3/4 of the grapes into bowls, top with the crème and decorate with the remaining grapes and cashew nuts.
