Apple and Almond Torte


  • 1 eggs, whisked
  • 150 g white flour
  • 2 pinches salt
  • 1.5 tbsp. sugar
  • 100 g sliced almonds
  • 1 bag vanilla sugar
  • 50 g butter
  • 2 tbsp. milk
  • tbsp. icing sugar to dust
  • 1.5 tbsp. lemon juice
  • 600 g apples

Mix the flour and the remaining ingredients with the vanilla sugar in a bowl. Add the butter and, using your hands, rub together to form an evenly crumbly mixture. Add the egg, and mix quickly to create a soft dough – do not knead. Shape the dough to a ball, cover and chill for approx. 30 mins.

Transfer 1/2 the dough onto the base of the prepared tin, dust with a little flour and roll out to a circle. Re-attach the frame of the tin. On a surface lightly dusted with flour, between two sheets of baking dough roll out the remaining dough to a thickness of approx. 3 mm. Cut out circles approx. 5 cm Ø. Lay these along the edge, overlapping slightly (only just covering the edge of the dough base). Place the tin in the fridge.

Melt the butter. Add the almonds. Stir in the sugar and milk and simmer for 1 min. Set aside the pan. Combine the icing sugar and lemon juice in a bowl, mix well. Thinly slice the apples and mix in immediately. Arrange the apples over the dough base then top with the almond mixture.

Bake for approx. 40 mins. on the bottom rack of an oven preheated to 180°C. Cover the torte with foil and finish baking for approx. 15 mins. Remove the torte from the oven, allow to cool slightly, remove the tin frame, place on a cooling rack and allow to cool. Dust the apple & almond torte with icing sugar.
