Cheese Dishes: Fig Bread Terrine

Fig Bread Terrine


  • 1 pinch salt
  • 0.5 tsp. agar-agar (Morga)
  • 1.5 dl single cream
  • 10 peppercorns, crushed
  • 60 g mountain cheese with herbs e.g. Pro Montagna Gstaad herb cheese, finely grated
  • 1 fig bread (Coop Naturaplan, 250 g), cut horizontally into 4 slices

Bring the cream to the boil with the agar-agar, pepper and salt and simmer for approx. 2 mins. Remove the pan from the heat, stir in the cheese until melted. Allow the mixture to cool, cover and leave to chill for approx. 30 mins. Stir the mixture until smooth and spread over 3 slices of bread, stack the slices of bread, wrap in foil and chill for approx. 30 mins.
