Minced Beef Meat Loaf al Sugo


  • a little pepper
  • 1.5 dl meat bouillon
  • 0.5 tsp. salt
  • 1 onion, finely chopped
  • 600 g minced meat (beef and pork)
  • 50 g grated Parmesan
  • 0.5 tsp. sugar
  • 1 tbsp. olive oil to fry
  • 150 g carrots, finely grated
  • 100 g veal sausage meat
  • 30 g durum wheat semolina
  • 1 tin chopped tomatoes (ca. 400 g)
  • a little nutmeg
  • 1 tbsp. dried Italian herbs

Warm the olive oil in a frying pan. Sauté the onions, add the carrots and sauté for about another 5 mins., remove and allow to cool completely in a large bowl. Add the meat, sausage meat, cheese and semolina. Season the mixture, knead well by hand and, with wet hands, shape the meat. Heat the oil in the same pan. Brown the meat all over for approx. 10 mins. over a medium heat. Add the tomatoes and stock, season. Cover and braise the meat over a low heat for approx. 40 mins., spooning over the sauce from time to time. Remove the meat, cover and leave to stand for approx. 10 mins. Slice the meat and plate up with the sauce.
