Herby meatballs


  • 1 carrots
  • 1 eggs
  • a little pepper
  • 0.5 tsp. salt
  • 600 g minced meat (beef and pork)
  • 3 tbsp. olive oil
  • 1 bunch oregano
  • 1 bunch chives
  • 1 bunch parsley
  • 300 g day-old bread
  • 1 clove of garlic
  • oil zum Braten
  • 1 oak leaf lettuce
  • 2 tbsp. herbal vinegar

Finely chop the oregano, chives and parsley. Cut the bread into small cubes. Roughly grate the carrots, crush the garlic and mix with the meat, egg, herbs and 100g of bread cubes, season. Knead the mixture well by hand until the ingredients form a compact mass that no longer sticks to your hands. With wet hands, shape the mixture into around 12 patties.

Fry the patties in batches in hot oil over a medium heat for about 4 mins. on each side. In the same pan, toast the remaining bread cubes. Tear the salad leaves, combine the vinegar and oil, add salt to taste and drizzle over.
