Entrecôte Steak with Roquefort Nut Butter


  • oil to fry
  • a little pepper
  • 0.5 tsp. salt
  • 15 g Roquefort
  • 35 g butter, soft
  • 10 g walnuts, finely chopped, roasted
  • 1 sage leaves, finely chopped
  • 1 stick flat-leaf parsley
  • 2 beef entrecôte

Mash the Roquefort and butter with a fork. Add the nuts, sage and parsley, season and stir until smooth. Season the meat. Heat the oil in a frying pan and fry the meat for about 3 ½ mins. on each side (à point).
