Beef: Beef Tartare

Beef Tartare


  • 1 tsp. salt
  • 2 shallot
  • 600 g beef tenderloin
  • 50 g dill pickles
  • 50 g capers
  • 2 tbsp. Worcestershire sauce
  • 4 tbsp. ketchup
  • 2 tbsp. paprika
  • 0.25 tsp. cayenne pepper

Finely slice the beef fillet and freeze in the freezer for approx. 10 mins. Cut the meat into small cubes and place in a bowl.

Finely chop the shallots, gherkins and capers. Set aside 1/4 to garnish. Mix the rest with the meat. Stir in the ketchup and all the remaining ingredients. Place a large cutter on the plate, spoon the mixture into it and press down lightly. Carefully remove the cutter. Garnish the tartar with the reserved vegetable mixture.
